Zankbagel was founded by Zachary Cark, a former engineer who developed a passion for baking during the COVID-19 pandemic. Cark started experimenting with baking breads and bagels, and after some time, he began to sell his products to friends and family. In February 2023, Zankbagel opened its first retail location in the trendy Braddon neighborhood of Canberra. The bakery has been well-received by locals and tourists alike, and Cark has plans to expand the business in the coming months.
